The closest I can come is Benicio del Toro.

    The Usual Suspects
Fear and Loathing in Las Vegas
    Traffic
    Sin City
    Che

Other contenders I've looked at but didn't quite get there:

    Sir Alec Guinness
    James Woods
    James Spader, and
    Alec Baldwin

Close, but no cigar. Great films, but uncertain there's enough diversity among the great films for each.

Johnny Depp would certainly qualify if considered a great actor. You can practically pick five from his filmography. A lot of them are pretty diverse.

Doesn't look anyone did Samuel L Jackson....

A Time To Kill - Drama
    Jackie Brown - Crime
    Unbreakable - Superhero
    Django Unchained - Western
    Jurassic Park - Adventure

Bonus: Pulp Fiction (I look at it more as a dark comedy rather than a crime film)

I know many will question Unbreakable as great but I have always loved that movie and thinks it great.

How are you characterizing the last two such that they are different genres? Moreover, Hannibal is a great film?

I'm with you on Stewart (though I would've gone for The Naked Spur).

Paul Newman - probably too easy, but...
    The Verdict
    Hombre
The Drowning Pool (much prefer it to Harper...)
    The Hustler
    Cool Hand Luke

    Jeff Bridges -

Thunderbolt and Lightfoot - or The Big Lebowski
    The Last Picture Show
True Grit - or Bad Company
    The Fabulous Baker Boys
Tucker: The Man and His Dream

Here's an unpopular one bearing in mind there are people hate who seem to hate him:
    Kevin Costner -
    JFK
    Dances With Wolves
    The Untouchables
    Field of Dreams
    No Way Out

    Henry Fonda -
    My Darling Clementine
    Mr Roberts
    Fail-Safe
    12 Angry Men
    The Grapes of Wrath

Charlton Heston - for me, a ham in many films, but he's great in these:
    Will Penny
    Planet of the Apes
    El Cid
    Touch of Evil
The Three Musketeers (which I'm including as a comedy...)
