Dark Side is a good choice since most issues of it have a great sound to it.
But what I want to introduce people to is "listening" to music in general, moving away from music as background noise, and for that I think there is no better than Wish You Were Here.
Vinyl for me is more getting into music than it is about sound. Because once you get into sound over music youre going down down down the rabbit hole.

I have done this to 3 friends already and they come out of it with a new understanding of what music can be. Not individual songs or playlists on Spotify, but an album, a story, an experience.

But first I like to ask what they want to hear.

Definitely an audiophile disc, to best show off the capabilities of vinyl. Maybe something like this direct-to-disc gem:

I don't think anyone ever "gets into LPs"; either they like music or they don't. Personally I almost always think in terms of songs rather than albums, but I buy albums based on availability, bang for the buck and the likelihood that one good song by a band might hint at the presence of several more.

Much would depend on the kind of music a person likes. Foxtrot by Genesis is an excellent LP that I would recommend, but not everyone likes progressive rock. I wouldn't think that a person would stop "getting into LPs" if you played him the wrong LP.

Depends, if you show them what led you to like vinyl then they might follow. You can also learn to like music through LPs.

Do they do a Dead Kennedy's cover?

The 33rpm Classics version is also superb but the 45 takes it by a close margin.

I do hate to turn sides so many times, but it might just be worth it for this.

It needs to be something they like, first off. I'm certainly not going to play them a Shostakovich symphony if they'd rather hear Aerosmith.

I can cue up duplicate CD and Vinyl copies of "Dave Brubeck Take Five" and let the drum reverb and cymbals speak for themselves.
The CD sounds like towels were placed all over the drums to deaden them.
The Vinyl simply rings out for days with cymbal hits that sparkle and decay through next week.
    Gets 'em every time.
Even an idiot can hear it.

    If they're into rock/folk/etc.:
Original MoFi Tea for the Tillerman
Kevin Gray and Steve Hoffman cut Warner Brothers reissue of Moondance (likely my best sounding record)

    If they're into jazz:
Rhino mono reissue of Giant Steps
    MoFi Sketches of Spain
    AP Headhunters

    If they're into classical:
    Deutche Grammophon Beethoven's 5th Symphony
    Colombia Masterworks Brandenburg Concertos

    If they're into hip-hop/r&b:
Limited edition pressing of Blonde by Frank Ocean
Kendrick Lamar's To Pimp a Butterfly

Radiohead In Rainbows! That album specifically sounds incredibly different on vinyl when compared to CD

Played Wish You Were Here Second Uk issue Vinyl to 21 year old god son and his jaw dropped,he could not believe what he was hearing.
He comes from a no stereo system house his mum and dad and he and his sister listen to music on phones only.
Well he said when he gets his own flat next year he's going to ask me to help him get a turntable amp and speakers and some vinyl to play on it. I was so pleased he's finished College top of the year and got a job as finance and pensions advisor so will soon save for his own place. Nice to get a young guy into vinyl.
Little does he know I have been putting vinyl away for him for a few years now.

When I was gainfully employed, a fellow worker loaned me an album of Tchaikovsky's 1812 Overture, with the feature being the cannon blasts.
    It was amazing.
