Working on a playlist that was inspired by "Tramontane" by Foreigner, a "deep track" from their 70s classic era that I like as well as their hit vocal recordings. So, I'm looking for suggestions for mostly one-off instrumental tracks by bands/solo artists who weren't famous for instrumental music. Here's a few I've got so far...

    Fire On High - ELO
    Hoedown - ELP
    YYZ - Rush
    Tramontane - Foreigner
Tales of the Unexpected - Mahogany Rush
Peaches and Diesel - Eric Clapton
Song For Guy - Elton John
The Mexican Connection - Billy Joel

    Other suggestions?

i think elp doesn't belong in this thread... they got long instrumental sections in almost all their long tracks...

Song For Guy has lyrics and doesn't really qualify IMO unless you want to give it an early fade.

Bowie has a double album's worth of instrumentals to choose from, although from the rock flavour of your list i don't think they're necessarily what you're looking for.

    Wings - Cuff Link
Wings - Loup (wordless vocals count as an "instrument", right?)
Grateful Dead - Sage and Spirit (Bob Weir did use parts of this later for "Lost Sailor" though)

All those great Brian Wilson/Beach Boys instrumentals:

    "Summer Means New Love"
    "Let's Go Away for Awhile"
    "Pet Sounds"
    "Diamond Head"

Oh, and the Stones' "2120 South Michigan Avenue".

Saw the Beastie Boys live about 10 times, and in many of their shows they would do a segment where they would pull out instruments and start performing as a live band, doing punky stuff, hip hop, and instrumentals in a poor man's version of MMW, and it was really much more entertaining than you would imagine. Some examples of their instrumentals:

Beastie Boys - Pow / Groove Holmes / In 3's / Namaste (Check Your Head)

Beastie Boys - Bobo On The Corner / Sabrosa / Eugene's Lament / Ricky's Theme / Shambala / Transitions (Ill Communication)

Beastie Boys - The In Sound From The Way Out! ( A compilation album of their instrumentals)

I love the Danny Kirwan led instrumentals by Fleetwood Mac. There are several though, not just a "one-off", so maybe it shouldn't count.

Anyway, this is beautiful beyond belief:
    Edit

"My Dream" from Then Play On is probably even better.

E Streeters Clarence Clemons & Max Weinberg both covered the same instrumental - "Summer On Signal Hill" written by some obscure New Jersey performer.

Somewhat broody and almost sinister (mysterious is probably a better word) but quite atmospheric and very memorable (to me anyway) from their third album..

They did a handful of instrumentals- best known for Return Of The Los Palmas 7 which was a number 7 single in the UK (coincidentally enough..) although that's a little jollier and has a bit of 'chat' in it. So that may or may not count. They did a great version of Swan Lake as well although they were not the first to put a ska beat to it.
