    Since we've mentioned Anthony Phillips... Genesis Trespass is, while not always pastoral, is for the most part an album that captures the mood exceptionally well. Stagnation and Dusk standout.

    Not exactly "pastoral" in the British kind of way but still a great acoustic folk/bluesy album.
    John Renbourn's solo albums are also worth checking out (Lady & the Unicorn, etc.)

    In the classical canon, I immediately think of Ralph Vaughan Williams: A Pastoral Symphony, The Lark Ascending, Fantasia on 'Greensleeves', to name just three. Vaughan Williams work has been described as characteristically English, and any of the aforementioned works do powerfully evoke the English countryside (at least, if you are English they seem to!).

    Outside of the classical world I would recommend Heron's self-titled album, which was actually recorded in a field - eye-wateringly expensive on original vinyl, but there is a nice compilation CD available, 'Upon Reflection'.

    My wrong; it must be VirginIa Astley. It borders on "New Age"-music, but it has a nice acoustig/organic feel to it.

    Agree whole-heartedly with the Vaughan Williams. (Don't know Heron.) Also consider sampling some Elizabethan music. Lute music by Dowland for instance. Or cross the Atlantic and try something like "Heartland: An Appalachian Anthology."

    When I hear the term pastoral I think of Village Life by Herbie Hancock and Foday Musa Suso, which sounds nothing like most of those mentioned, or anything else really.

    I was listening to Gentle Giant last week and it struck me how similar the two band were in the mid-70's. Maybe give the live album a try?

    I'd also recommend Open Road by Stained Glass (the UK folk band, not to be confused with the US psychedelic group):
