    Jerry Garcia - Mississippi Moon.
    There are only clarinets for instrumentation (maybe a flute/piccolo as well). It's a quiet track with lots of audible breaths before vocal lines. However, before the final chorus it sounds like they miked the entire wind section's breath. It is very dramatic, and unlike the regular vocal inhales, sounds like it was deliberately included.

    Rufus Wainwright is the same & the first artist I thought of, when I saw this thread - like it or not, he's never shied away from allowing the effects of the physiological process of singing to be heard on his albums.

    several Pink Floyd have been mentioned, but surprisingly not this one, where the breathing is clearly a stylistic (rhythmical) device

    I love the moment around 2'25 where the breathing becomes uncannily deep

    the song is of course Don't Leave Me Now

    It's clearly audible Mike's breath between "Surf! Surf!" and "Bom-bom-dip-dip-drip".
