    Green Bullfrog. Recorded in a single session in 1970 or 1971, depending on the source. Session include Albert Lee, Matthew Fisher, Ian Paice, Tony Ashton, Rod Alexander, Chas Hodges, Earl Jordan, Big Jim Sullivan and Ritchie Blackmore. Due to contractual reasons all participants were given pseudonyms.

    Pretty much the whole Billy Joel "An Innocent Man" album...

    Honorable mention goes to Tina Turner's "Private Dancer". All but about one song was recorded inside of a week.

    Cowboy Junkies. The Trinity Sessions. From the liner notes: "Captured live at the Church of the Holy Trinity in Toronto, Canada on Nov. 27, 1987....using only a [!] Calrec-Ambisonic Microphone."
    Sounds incredible- a true landmark. If you know any "audio engineers" give them this album so they can learn about mmm... room acoustics and mic placment.

    As Cassiel and il pleut have mentioned, lots of jazz albums.

    I just picked up a wonderful jazz CD this morning by baritone
    saxophonist Gary Smulyan titled The Real Deal which was
    entirely recorded in one day.
