Bart Davenport - Rambling's Gonna Be the Death of Me Bert Jansch released the original on his self-titled debut album in 1965. Great cover from the American songwriter Bart Davenport on his 2011 album "Searching for Bart Davenport". The album included other notable covers, e.g. Caetano Veloso's "Maria Bethânia", Bridget St. John's "Autumn Lullaby" and Jackson C. Frank's "Blues Run the Game".
I don't think one can top "Twist and Shout" by the Fabs. The Royal Command Performance performance (and intro by John) is fantastic.
The Chambers Brothers - People Get Ready Written by the great Curtis Mayfield and released by The Impressions as a single on ABC-Paramount in 1965. The Chambers Brothers released their first cover of the song on the album "People Get Ready" in 1966, a live record compiled of sessions at the Ash Grove in Los Angeles and The Unicorn in Boston. One year later they followed with a studio version on their Columbia album "The Time Has Come".
The Geraldine Fibbers - Fancy Bobbie Gentry's original was released as a single in late 1969, and was included on her 1970 album "Fancy". The Geraldine Fibbers were an alt-country band that released a handful of singles, EPs and albums between 1994 and 1997. The band's founder and lead singer Carla Bozulich later formed the band Evangelista. She also released some records under her own name, amongst them "Red Headed Stranger" (a cover of the classic Willie Nelson album).

Perhaps my favourite song that has two absolutely outstanding versions by different artists (and the versions are very different) is Here's Where You Belong, recorded by the Grass Roots and the West Coast Pop Art Experimental Band. But I'm not sure which (if either) is the original and which is the cover.
