Impossible to pick just one.
this is certainly on my short-list!
Jaws (John Williams)
Eiger Sanction (John Williams)
Blade Runner (Vangelis)
Bernard Herrmann - most anything but really like Psycho and Vertigo.
Bugsy Malone, Saturday Night Fever, Psycho *edit: Out of Africa
Conan the Barbarian
The Third Man soundtrack album is also great. Side 1 of the London LP has Anton Karas's material and Side 2 has more zither music from Fritz and Jacky, and then there is the very thorough Jasmine CD of Anton Karas's best work including all of the key music from the soundtrack and tons more.
Last Tango In Paris
Bad Timing: A Sensual Experience
The Ice Storm
I'm not sure why (maybe what I was ingesting in the '81) but John Carpenter really got my attention with "Escape From New York". (As did Adrienne Barbeau)
As I mentioned, this is a must have CD for anybody collecting classic soundtracks with 25 tracks of all Anton Karas, this is a better listening experience than the London LP.
