Here's 5 of my ultimate faves:

Phil Manzanera (with Brian Eno). on John Cale - "Gun" (on Fear)
Phil Manzanera, on Roxy Music - "In Every Dream A Heartache", on For Your Pleasure
James Williamson on Iggy & The Stooges - "Shake Appeal" (or anything else on Raw Power)
Anything played by Richard Lloyd & Tom Verlaine on Television - Marquee Moon
The entire side 1 of Quicksilver Messenger Service - Happy Trails, especially John Cipollina's solos.

But I got tons more, lots of Tony Iommi, Ed King/Allen Collens/Gary Rossington, Page/Clapton/Beck, Billy Gibbons...

Great thread and lot of great replies!

Here'a a few of my faves:

Be-Bop Deluxe (Bill Nelson) - Crying To The Sky (My favorite solo of all time!)
King Crimson (Robert Fripp) - Starless (Fripp does more with one note over a few dozen bars than many guitarists accomplish in a lifetime)
Yes (Steve Howe) - Yours Is No Disgrace (The Yessongs version...just when you think his fingers have cooled off, he takes it up a notch)
Wishbone Ash (Andy Powell) - Persphone (Smooth, subtle and delicate as crystal)
Roxy Music (Phil Manzanera) - In Every Dream Home A Heartache (like it's dripping out of your head when listening with cans...)
Man (Deke Leonard/Micky Jones/John Cipollina) - 7171-511 (Guitar Mana. The Maximum Darkness version is the easiest to access...although there are superior solos on Bootlegs)
Robin Trower - Confessin' Midnight (There's a zillion great Trower solos, but this one always brings out his mojo...)

All of the above are thrill rides. Enjoy!

    5 random ones I haven't seen yet;

Brian Eno - St. Elmo's Fire (Robert Fripp on guiitar)
Mahavishnu Orchestra - Meeting Of The Spirits (John McLaughlin)
    Rush - Limelight (Alex Lifeson)
Ozzy Osbourne - Mr. Crowley (Randy Rhoads)
Paul Butterfield Blues Band - East West (Michael Bloomfield)

I know a little - Lynyrd Skynyrd (Stevie Gaines)
Statesboro Blues - Allman Brothers (Duane Allman & Dickey Betts)
Ramblin' - Marshall Tucker Band (Toy Caldwell)
Atlanta Rhythm Section - Spooky (Barry Bailey)
Freeborn Man - Outlaws {Bring it back alive} ( Hughie Thomasson & Bill Jones).

(Allman Bros may be more blues orientated but often considered So. Rock.)

He obviously was making a point about how amazing Thompson is as a soloist.

If that's one of the dumbest things you ever heard, you need to get out more.

Too many great Eddie solos, but definitely “Mean Street” and “I’m the One” are contenders. Tons of Eric Johnson stuff, but where do you start? Five is difficult. You really have to think about it.

What God Wants part 3 , from the Roger Waters lp Amused to Death, played by Jeff Beck. Definitely my number one favourite solo.

    Not in any order:
Rock a Bye Bye by Extreme, played by Nuno Bettencourt. A nice long, slow, solo, it's fantastic!
Goodbye to Love by The Carpenters, played by Tony Peluso.
Time by Pink Floyd, played by David Gilmour.
Nowhere Man, The Beatles, played by George Harrison. Actually i just read on Wiki that the lead guitar lines on the song were performed in unison by Harrison and Lennon. After all these years i never knew that.
This Kid's by UFO, played by Michael Schenker.
    Little Wing by Hendrix.
The Tourist by Radiohead, played by Jonny Greenwood. This solo is more in the background of the song, near the end.
Meanstreets by UFO, played by Atomik Tommy M.

Yeah i went a bit mental and i've always had trouble counting things!

One of my favorite composed guitar solos. The pyrotechnics in the second half are a little excessive, but still such an epic solo:
