Depends upon what you consider rock'n'roll. From the early 60s there's a lot, but the one that comes to mind is

    Is "cha-cha-boom" close enough?

Bobby Vee's earliest recording, written at age 16 in 1959, Suzie Baby, has a distinct cha cha cha ending. Only a different 1962 version is on youtube, but the 1959 original can be heard here on this blog below. (The flip side of this record is also here, a great instrumental called Flying High)

Bob Dylan's recent tribute cover of Suzie Baby is really charming. With a little bopping by Bob to the cha cha cha ending! Here:

U2's Discotheque ends with a BOOM CHA. Does that count?

My band does covers of Del Shannon's "Runaway" and Terry Stafford's "Suspicion", and we finish both of them using the "cha-cha-cha" ending. The recorded versions have fade-out endings, which don't really work too well in a live scenario, so we had to come up with an alternative.

Stevie Wonder - I Just Called To Say I Love You... not rock 'n roll, but not Mantovani, either.

I remember one of the songs from the Recommended Records Sampler had an ending like this.

Just looked it up: "Walk Before Imitate" by the Homosexuals.

The first one I thought of but quite some distance from 'rock and roll'.

No. The song doesn't actually end with that phrase, and it's not really in the same vein as the musical "cha cha cha" finish. (Great, underrated song, though! :righton:)

I think people are getting confused about the concept. I think the OP wants songs that conclude with the "bum bum bum" beat, whether spoken or played. Just having someone say "cha cha" at some point in the song doesn't qualify it.

Listen to the ending of this to hear what I believe was intended:
