Justin Wilson Cajun Cooking on PBS

    The Bob Ross thread inspired me to start this one. Like many, I only got a couple of channels and one was PBS. My favorite show that was not for kids was Justin Wilson's cooking show. Any other fans here?

    I remember saying shicken as a child and even as an adult. Now I remember why...And cayenne pepper, ohn-yohn-garlic.

    the Ninja Turtles had an alligator character on the 1980s cartoon ....early 90s maybe....and I remember being aware that it sounded just like the Cajun guy on PBS.....to the point where whoever did the character (I remember wondering if it was him) used Justin as a reference point for the alligator dude...he might even have said gaaar-oon-teeee

    I love him . I used to watch that show all the time and they used to have an ad for his story-telling cassettes. I sent away for a couple and they were great. I think you can still get some of his albums plus a lot of it is on youtube. Great stuff.

    Wouldn't Justin put mayonnaise in just about every dish?

    Watched his show regularly when I lived in Louisiana. And AFRTS carried him when I was stationed in Greece, he was a favorite there as well.

    I don't think it was possible to follow his recipes, unless you were born within 50 miles of him.

    I taped his Santa's Vacation recital off the radio many years go when it was being played on an alternative radio station at Christmas of course. One of a kind.

    I have a first edition of his book. I have had it since the early 70's.

    My mom and I used to watch JooStan every Saturday afternoon.
    I always liked how he would mention something about "those of you that don't believe that's that's a tablespoon.."than he would show everyone in the audience how close he was,and they would applaud.
    Than when we was done cooking,he'd sit down at the table with a big glass of wine and take a bite;"MMMMMmmmm!!"

    I think he also was featured in TV commercial for Ruffles potato chips.

    Loved watching his show. It helped usher in the La cuisine craze of the late 80s. His cookbook was my second One after the Joy of Cooking.

    I remember needing to make a roux and figured his book would have a recipe. I was about 22 at the time and did not really know what I was doing cooking. Turns out the recipe I followed was for a similarly named potato soup recipe. Needless to say, but that was not a very good gumbo.
