For the Moody Blues an obvious one would be Go Now. But that seems too trite. So I was happy when I saw them in concert in the 70s and the finale was Ride My See Saw.

Excerpt that one is out of their repertoire now, unfortunately.

Now it's almost always A Whiter Shade of Pale.

Agree completely re: The Doors -- The End

    also

Beatles -- Hamburg or the Cavern -- "Twist and Shout"

    The 'Oo
-- "Won't Get Fooled Again" or "Anyway, Anyhow, Anywhere"

    The Kinks -- Waterloo Sunset

    Neil Young
    -- Cinnamon Girl
(but "Ambulance Blues" would have to have been in the set list)

Jimi Hendrix -- Voodoo Child (Slight Return)

    Jethro Tull
-- a bit longer than the usual encore  -- Thick as a Brick

They did it, Paul McCartney and Wings with a blistering hard rockin encore of HI HI HI!
The night I saw them, the crowd went wild when they ripped through this hot rocker!

No doubt. Saw them at the Music Hall in Boston in '77 and Toy Caldwell made me want to play guitar (the right way - with painful practice)!

Green Day's encore mostly is 'Good Riddance (Time Of Your Life)' but Billie Joe is playing that on electric guitar. He should play it on an acoustic one more often.
Otherwise, I love the song 'Whatsername' which could be a great alternate last song for their concerts.

Wow! Never heard that uncut version before. A stereo version of the whole album would be nice.

The Doors: The End might be the first initial reaction for obvious reason... but to my mind given the lyrics of the entire song as well as the music line itself... When The Music's Over.

If the crowd at a Ray Charles show was in a particularly belligerent mood for some reason... Hit The Road Jack

...and don't you come back no more no more no more no more; Hit The Road Jack...
