I think both Sinead O'Connor's and Chris Cornell's versions of "Nothing Compares 2 U" are great.

    Any other examples?

Christmas songs are the prime candidate for this in my view. Countless great ones exist for, say, Winter Wonderland or The Christmas Song. Although I still think Nat King Cole has the "definitive" version of the latter. It's actually much harder, in my experience, to find pop/rock songs that have numerous equally great versions. Although I'm sure a few might come to me.

Flying Burrito Brothers do a great attempt at a version that unfortunately stops too soon. AFAIK no full version has ever been unearthed.

"Time Is On My Side" was was originally recorded by Kai Winding (featuring Cissy Houston, Dionne Warwick & Dee Dee Warwick), then was popularized by Irma Thomas, then was immortalized by the Rolling Stones.
