MCCOY: You wouldn't understand that, would you, Spock?
You see, I feel sorrier for you than I do for him because you'll never know the things that love can drive a man to.
The ecstasies, the miseries, the broken rules, the desperate chances, the glorious failures, the glorious victories.
All of these things you'll never know simply because the word love isn't written into your book. Goodnight, Spock.
    SPOCK: Goodnight, Doctor.
MCCOY: I do wish he could forget her.
(McCoy leaves. Spock goes over to Kirk and initiates a mind meld)
    SPOCK: Forget.

I love Spock’s line in this one, when the Captain stops McCoy:

McCoy: “You deliberately stopped me Jim. I could have saved her. Do you know what you just did?”

Captain: “He knows, Doctor. He knows.”

It is Spock that says the line, not Kirk. I typed the wrong name.

    OK, this thread is fun.

    "Theft, Captain?"

I'm not sure I can remember exactly, but I will give it a go.

Kirk: "Spock, the women on your planet are logical? It's the only planet in the galaxy that can make that claim."

HARRY MUDD: Now listen, Spock, you may be a wonderful science officer but, believe me, you couldn't sell fake patents to your mother!
SPOCK: I fail to undertand why I should care to induce my mother to purchase falsified patents.

“Bread and Circuses” The gladiator fight that 20th century Rome prizes but in other parts of the galaxy look like a folk dance

Spock “You need any help, Doctor?”
McCoy “Whatever gave you that idea?”
Spock’s opponent “Fight, you pointed ear freak”
McCoy “You tell him, Buster. Of all the completely ridiculous, illogical questions I have ever heard in my life”

After Spock had recovered his sight

McCoy mumbling : Unusual eye arrangement .......
McCoy to Kirk : Please don't 't tell him I said he's the best first officer in the fleet

Spock : Why, thank you Doctor .

Kirk: You were so worried about his Vulcan eyes, you forgot about his Vulcan ears .

From what I've heard I think many would have liked to substitute rocks for Tribbles to drop on his head.
