You know, the second example in the OP is "Hippy Hippy Shake". He does not ask for "a cover of a song written by the Beatles", but "a cover better than the Beatles", so it cannot be an original performance of a song covered by the Beatles, but otherwise anything they recorded goes, I guess.

I am The Walrus - Spooky Tooth - Album "The Last Puff". A very good rendition/cover of this song. Better? In the ear of the listener!

Probably the best ever! but not better!

This is not better because it's TOTALLY DIFFERENT, but it is one of the ABSOLUTE BEST COVERS of a Beatles song EVER...

Got To Get You Into My Life. I love The Beatles version but Earth, Wind and Fire OWN the song.

None - next topic.....kidding (kind of:) I can't believe I'm saying this but I actually like Anne Murray's "I'm Happy Just To Dance With You". Not sure I like it better, but it is close!

I like many covers of Beatles songs, but I don't think any of them are better than the Beatles.

Technically The Beatles version is the cover, but I'm sure you knew that.
