Can you add my all time favorite singer's rendition of "In My Life" (Susan Ashton)? It comes from the "Come Together - America Salutes The Beatles" LP. It might have a few others you like too.
"If I fell" "Goodnight" "Mother natures son" "Blackbird" "do you want to know a secret" "I'll follow the sun" "Got to get you into my life" "With a little help" "and your bird can sing" "Carry that weight/Golden slumbers/the end" A lot of the earlier stuff, too much too list. I tend to not care for a lot of the more "popular" stuff that some do I guess, more the acoustic stuff and the catchier earlier tunes.
A couple others from my collection that I don't see: Revolution - Stereophonics (from one of the Jools Holland collaboration albums) I'll Cry Instead - Rhett Miller (live album - Old 97's lead singer). I Saw Her Standing There - Lennon & Elton b-side. Elton also released a b-side with a live medley of Whole Lotta Shakin/Saw Her Standing There/Twist & Shout.
