I'm a bit busy now, and don't want to forget this.... First song that comes to my mind is the acoustic solo on Led Zeppelin's "All My Love" but I'll think of more

"Suite: Judy Blue Eyes" ~ CSN

I've seen CSN(and Y) maybe 7 times since 1985. Stills ALWAYS played blistering acoustic solos during this song.

I also love George’s solo in “Learning How To Love You” and it always reminded me of his solo in “Till There Was You “ because it’s very melodic with a lot of movement also .

The solo is at around 2:20 here:

The acoustic guitar solo at the beginning of "Find The Cost Of Freedom" is certainly great.

I have to mention my current favorite acoustic guitar player also ..Tommy Emmanuel.
I love all of his playing so I just grabbed the first one I came across on YouTube.

The acoustic guitar solo by Pete Townshend at the end of "Sister Disco" is also great.

Cool thread idea! Willie Nelson has played some beautiful and badass acoustic guitar solos. And I agree with others that Dave Rawlings is phenomenal.

Here's a great one from Richard Thompson. Starts around 2:34, if you're in a hurry.

Edit: I'm not sure if this is really what the OP meant by "acoustic guitar solo", but OMG.
