It's a post-fermented tea. Imagine Assam, stored for years in a humid climate, fermenting with molds and micro-organisms. You can buy twenty year old pu-erh from centuries old tea-trees. It's like the chinese version of very expensive wine or scotch. But it hasn't got to be that old and expensive.

I tend to drink my pu-ehr in the cooler/winter months and along with oolong, my favorite teas. A tea specialist had a friend who could test such things evaluate the microbes in a sample of very old pu-ehr (much older than 20 YO) and there were microbes in the tea that were thought to no longer exist! No jazz at the moment. I've been revisiting some early Alejandro Escovedo albums I haven't played in a while.

Holy vibrato! Bechet really doesn't play without it. Good, important music but the continual vibrato wears me out a bit.
