As someone who's suffered that same paranoia, listen to a digitally recorded solo piano CD....if you hear wavering pitch there, you can safely tell yourself it's all in your head. On the whole I'm not a fan of digital anything, but it does have its strengths, one being superior pitch stability (assuming the masters were solid).
