I can't seem to find it, but "Theodora Is Dozing" by the Bulgarian Women's Choir (Nonesuch records) is one of my all-time favorite a cappella recordings

As much as I enjoy hearing isolated vocal tracks, they aren't designed as an "a cappella" performance, and really do not count here.

For The best and most vital acapella music one has to go to African American Gospel music.
Expand your horizons and explore this music.
A great example is "Jesus Met The Woman At the Well" by the Pilgrim Travelers, and the version by the Famous Blue Jay Singers of Birmingham Alabama.
For those interested I can post some good starter collections

The first time I heard this was on Radio Luxembourg the winter of 1973. Gave me chills and goosebumps! It remains one of my favorite songs of the holiday season. Erasure put a version of it on their Christmas album a few years ago which I quite like as well (though it's not a capella).

The post on Steeleye Span reminded me of Jacqui McShee of Pentangle.
Did and still does great acapella folk ballads.

It doesn't get any better (or more authentic) than this:

Ladies and gentlemen, the godfathers of modern acappella ...
