“Angel Dust” by Faith No More has the “Midnight Cowboy” theme as last song.
They doubled-up when re-releasing the album, by adding “Easy” by the Commodores as a bonus track.

Ween’s “The Mollusk” ends with a secret instrumental reprise of the opening track “I’m Dancing In The Show Tonight” which itself is a cover of “Are My Ears on Staight?” by Gayla Peevey with modified lyrics. Since the ending track is an instrumental, you could say it’s just a straight up instrumental cover of the Gayla Peevey track.

Pantera's Far Beyond Driven, which ended with a (great) cover of Black Sabbath's "Planet Caravan". I actually prefer it to the Sabbath version.
