I had started a thread and someone did the same thing there. Reading through this thread is causing me flashbacks. I don’t know if it’s been mentioned, but John Landis often had directors make cameos in his films. Also, singer Stephen Bishop who did the Animal House theme makes a cameo (by my definition) in the same film.

there is a lot of unbilled cameos in fellini's roma anna magnani and gore vidal are the most obvious there are also chuck mc cann, a very dennis christopher and cassandra peterson (elvira) finally there is marcello mastroianni unrecognizable in a scuba suit
Robert Duvall in a 1967 episode of The Time Tunnel titled Chase Through Time: I remember when I first became aware of this. I was up at 2AM, this was in the late '80s, I was zombified just sitting in front of the TV and on came a rerun of The Time Tunnel then...I saw Robert Duvall. I even think I shouted, "OH NO -- IT'S ROBERT DUVALL!!!"
