Been poking through Back to the Garden, and that question ran through my mind. Being younger than the boomers, and my concert-going days didn't begin until a decade later, my list won't be quite as extensive as others.

    Mine:
Gregg Rolie - obviously was in Santana. Seen him as part of Ringo's All Starrs.
Grateful Dead - as an aside, was quite impressed how "Dark Star" came off at Woodstock.
The Who - all after Moon was gone and once after Entwistle.
Rick Danko - from The Band. Seen him completely solo at my college.
Neil Young - from CSNY. Only seen him once, which was with Crazy Horse, oddly enough the night before seeing The Who at the same venue.
David Sanborn - was in the Butterfield Blues Band. He mentioned this at a summer outdoor concert in Buffalo (probably others, as well). Had no idea until he said so. Also indicated in the notes in the collection.

In one form or another, I've seen everyone but Hendrix, Janis, Sly, Tim Hardin, Keef Hartley, Bert Sommer, Ravi Shankar, Sweetwater, Quill, and half the ISB.

Though the version of Blood, Sweat & Tears that I saw didn't include a soul who played at Woodstock, so that doesn't count.

    Johnny Winter : 1969 or 1970

And if we are counting individuals at Woodstock I saw Graham Nash with the Hollies in January 1967 I think it was.

Your post had me edit my post - since I realized I saw Steve Katz solo, and I saw the "modern" version of Big Brother (with Sam Andrews (who played with Janis at Woodstock) - and all other original members of Big Brother with a "stand-in" for Janis. :) )
